DONUTS CARROT CAKE 🍩

Inés Basterra from Hoy Comemos Sano  prepared this carrot cake donuts recipe in a healthy version: without sugar and flour and delicious! The ones that went to the opening party of our Bilbao store (Rodríguez Arias 2), could tried them and confirmed it: they’re a success for any event!

Ingredients

For the dough:

140g carrot  

-2 eggs 

-40 g oat powder (oat flour) 

-2 big medjool dates 

-1 tsp cinnamon 

-1 tsp baking powder 

Topping:

Greek yogurt

cinnamon

Preparation

Preheat the oven at 180ºC. 
 
Soak the dates in warm water for 15 minutes. 
 
Peel the carrot and grate it raw in a robot. Add the rest of the ingredients (don’t forget to take off the seed of the dates beforehand), crush well. 
 
Put the mixture in a pastry bag or a small jug and fill the donut molds. Put in the oven for 20-25min at 180ºC. 
 
Let them cool off completely and add Greek yogurt. Sprinkle a bit of cinnamon over, and they’re ready to be enjoyed!
