SPANAKOPITA

Ingredients

For the Spanakopita:

2 bgs of fresh spinach

1 bunch of spring onions

1 bunch of fresh parsley

Fresh dill

300 g of feta cheese

250 g of ricotta cheese

 

2 eggs

1 tsp of salt

Black pepper

375 g of filo dough

150 g of butter

Sesame seeds

For the Spanakopita:

Instructions

For the Spanakopita: 

Finley chop the spinach. Chope the spring onions, parsley, and dill.

Place the chopped ingredients in a large bowl and add the two cheeses, eggs, salt and black pepper. Mix well until fully combined.

Brush the bottom of a round baking dish with melted butter. Lay out a sheet of filo pastry and spread some of the filling along one edge. Brush the opposite edge with butter, and carefully roll it into a tube. Coil it into a spiral and place it in the centre of the dish. Repeat the process until the spiral is complete.

Brush the surface with melted butter and sprinkle with sesame seeds. Bake at 180ºC for 20 minutes.
