THREE KING'S CAKE

Ingredients

For the cake:

180 ml milk

10 g of dry active yeast

580 g plain flour

120 g sugar

2 eggs

80 g unsalted butter

Zest of one orange

Zest of half a lemon

Salt

For the decoration:

1 egg yolk

Sugar

Water

Candied orange

Sliced almonds

For the truffle filling:

500 ml heavy cream

30 g sugar

200 g dark chocolate (70%)

Process

For the cake: 

Mix all the dough ingredients in a bowl and knead until you obtain a smooth dough. Form a ball and let it rest for 5 minutes. Knead again for a minute and repeat this step several times. Form a ball and let it rise in a bowl covered with plastic wrap or a cloth until it doubles in size.

Knead the dough again to remove the fermentation gas and form a ball again. Make a well in the center, and with your fingers, stretch the dough into the shape of a crown. Place it on a baking sheet lined with baking paper. Cover with a cloth or plastic wrap and let it rise again for an hour.

Brush the surface of the crown with the eff yolk. Arrange slices of candied orange and sprinkle with sliced almonds. Mix the sugar with a tablespoon of water in a bowl, just enough to moisten it, and sprinkle over the crown.

Bake for 20 minutes at 180ºC. Let it cool before cutting it in half.

For the truffle filling:

Add the heavy cream to a saucepan with sugar and chopped chocolate. Cook over low heat until the chocolate is melted and blended. Let the mixture cool in the fridge and once chilled, whip it with an electric mixer. Transfer to a pastry bag.

Fill the crown with the truffle filling and serve.
